For references on Ukrainian history, here’s the site of the Canadian Institute for Ukrainian Studies at the University of Alberta. Also, check out their publications: they serve appetizing samples for many of the books. The CIUS’ masterwork is the translation of Mikhailo Hrushevsky’s History of Ukraine-Rus’.
Another interesting source is Encyclopedia of Ukraine — a work in progress, with a discernible anti-Russian bias but definitely enlightening.
